The chef’s fish of choice for its outstanding qualities\, this award-winning seabass breeds in the deep and oxygenated waters of the Atlantic sea with constant temperatures all year round and are fed with whole fishes from a sustainable fishery\, monitored and certified by the Marine Trust. Labels being served include resounding names like Joseph Phelps\, Duckhorn Vineyards\, Shafer\, Grgich Hills\, Freemark Abbey\, Black Stallion\, Far Niente and Robert Mondavi. Guests may also savor two jewels on the crown at the “Collector Wine” table – “Cask 23” of Stag’s Leap Wine Cellars and “Martha’s Vineyard” of Heitz Cellars. The former was the winner among the red wines in the historic Judgement of Paris in 1976\, where a panel of finest judges\, who were among the best tasters in France\, rated a California wine as the best for both the red and white flights. Catathelasma mushrooms are large and firm with subtle flavors\, which pair ideally with the richness imparted by the pork and black garlic. \nSautéed Hokkaido scallop with Cantharellus mushrooms and lily bulb \nStandout dishes on the menu are the fresh and flavorful simmered garoupa fillet with Morel mushroom in fish broth and the precious showcase of sautéed M9 Wagyu beef with Japanese pepper and Matsutake mushroom. Morel mushrooms are highly prized by gourmet chefs\, especially in France\, as their hollow honeycomb-like caps are full of flavor\, extremely delicate\, and valuable. Fresh morels are best in autumn\, while the dried caps still retain their meaty texture and earthy aroma to be cooked with fresh-caught garoupa and rejuvenated in fish broth for the ultimate umami dish. The heat of the dish brings out the distinct aroma of winter white truffles for a fabulous palate\, raising the overall dining experience to another level. \nThe Alba white truffle tasting menu at Ristorante il Teatro includes chilled langoustine with crustacean gelee\, and Kristal caviar\, Fassone veal tenderloin\, tonnato cream\, artichoke\, and a caper berry\, but also chestnut cream\, with Alba white truffle\, and seared goose liver\, Tagliolini Piemontesi\, Alba white truffle\, anchovy\, 84-month aged Parmigiano Reggiano\, and also New Zealand Te Mana lamb rack with pistachio crust\, and lamb jus. The menu ends with Zabaglione\, a traditional creamy\, light\, and classic Italian dessert made with egg yolks caster sugar\, and sweet wine.
