Hokkaido is rich in variety of fresh fish and processed seafood. The delicacies include crab,
scallops, sea urchin, salmon roe, salmon, herring, kinki fish, squid, octopus, shrimp, abalone, surf
clams and oysters. These seafood products have exquisite taste and flavor, and are rated among
the best of their type. Particular the crab is exceptional and are heavy given its size and rich in
flavor whether boiled in brine or prepared as sashimi. You will not find such rich and mellow
sweetness anywhere but in Hokkaido.
From July 19 to August 31, Yamazato offers delights of Hokkaido cuisine. All dishes are created
from carefully selected ingredients and crafted by Executive Chef Akira Hayashi to provide the
finest tasted to all our customers so that they may experience the unique tastes of Hokkaido.
