Fook Lam Moon and Lai Heen chefs produce an exquisite four-hands dinner to everyone’s delight. It includes crispy suckling pig with foie gras terrine, seared Hokkaido scallop, egg white and wild mushrooms, but also a double boiled deluxe fish maw soup with snow goose and sea horse, braised abalone with pomelo skin and matsutake. There’s also steamed fillet of spotted grouper in rich fish broth and Jinhua ham, braised winter melon with superior stock, hairy crab roe, pea shoots, crispy chicken roulade with truffles and lobster spirulina noodles soup, among others.
