Now the hotel is taking your dining experience to a new level with “A Sichuan Journey with Master Chefs” – an exclusive menu jointly presented by guest chef Lan Qijin, master of Sichuan cuisine, and Executive Chinese Chef of StarWorld Hotel Chan Chek Keong. This gourmet extravaganza will be exclusively available at the two-Michelin-starred restaurant Feng Wei Ju on November and December, 2019. Known as the “Land of Abundance”, Sichuan boasts an eclectic cuisine style that involves the creative use of spices and a wide range of cooking techniques. With this latest promotion at StarWorld Hotel, guests are invited to explore the unique taste and charm of each dish.
With creativity and mastery of culinary techniques, Chef Chan Chek Keong has led Feng Wei Ju to become the only Hunan and Sichuan restaurant with two Michelin stars for three consecutive years in Hong Kong and Macau. Lan Qijin, a master of Sichuan cuisine, is one of the first “Distinguished Service Culinary Artists” in China. He has nearly 50 years of experience in the industry and is known for combining tradition with innovation, and incorporating health benefits into his dishes.
Upholding traditional Sichuan culinary art and techniques, the two master chefs craft an 11-course menu infused with the diverse tastes of Sichuan cuisine such as tingly-numbness, spiciness, freshness and sweetness.The 11 meticulously selected delicacies on the menu present the essence of Sichuan cuisine through diverse flavors and the use of fresh ingredients and spices.
For instance, the fried bamboo shoots with green peppercorns and dried chilli combines the hot and spicy tastes of peppercorns and dried chilli with the sweetness of fried bamboo to present diverse flavors. With a history that can be dated back to one hundred years ago, the steamed minced chicken with Matsutake is a classic Sichuan dish delicately presented but is packed with bold flavors. The marinated abalone with pickled chilli is a perfect starter that combines the marine sweetness of fresh abalone with the warming sensation of the hot spices, reflecting the flexible mix and match of Sichuan cuisine.
The unmissable main courses include carefully prepared duck breast with morel mushrooms. Precious morel mushrooms impart a deep, earthy aroma to the succulent duck breast, which are glazed with an enticing savory sauce. Shredded winter melon with bird’s nest in broth, a traditional Sichuan soup served in banquets, is also on our menu. It is no surprise that the harmonious pairing of ingredients in this dish has come to symbolize reunion and happiness.
