Grand Lisboa Palace Resort Macau is launching a special hairy crab menu at Chalou, featuring meticulous Cantonese delicacies enhanced by the prized crustaceans. Paying homage to classic Canton culture with a modern design language, Chalou has carefully selected high-quality Jiangsu freshwater hairy crabs to make dishes not only with sweet crab meat but also decadent roe. Through rich flavors and precise presentation, the hairy crab specials at Chalou are not to be missed.
Limited to five portions per day, the giant hairy crab roe with sea urchin braised homemade noodles are made with at least eight hairy crabs. Fresh crab roe paste and half a plate of sea urchins are served with al dente and smooth noodles, fit to serve eight to ten guests. Fragrantly rich and strong tasting, the noodles are paired with small plates of extra toppings and condiments for guests to adjust the portions and flavours to their liking.
Hairy crab soup in mini pumpkin (see featured image) is a perfect combination of soft and smooth shredded crab meat and silky mashed pumpkin, simmered with the eight-hour-long slow-cooked bone broth. Each drop of soup holds a well-rounded taste of savory to sweet.
The stuffed chicken wings with hairy crab create a new precedent on the traditional stuffed chicken wings! This dish replaces the shrimp filling with resplendent crab roe, crab meat, and cuttlefish paste. The stuffed chicken wings are then deep-fried to the perfect ratio of crispy on the outside and soft on the inside. Their handmade hairy crab soup dumplings: feature a thin layer of dumpling skin that is hand-rolled by the chef before it is stuffed with sublime crab roe, minced pork, and soup gelatin. From the first bite of this steamed soup dumpling, hot and delicious broth and tender roe fill the mouth with a flavor explosion.
Chalou also offers dishes such as hairy crab braised rice noodles, baby spinach topped with braised hairy crab and Ibérico ham, and fresh hairy crab and pork dumplings. Guests who prefer the more traditional way to enjoy crabs can choose to have male or female steamed hairy crab with perilla leaves. Gastronomes can pair these dishes with hot ginger tea or Chinese yellow wine to enhance the natural flavors of the crabs and counter their cooling effect.
