The Michelin Guide Hong Kong Macau Dining Series reignites the region’s most anticipated chef collaboration series, the International Chef Showcase (ICS), with a line-up of unique multi-hands culinary collaborations for 2019. Following a successful six-hands event at Yí at City of Dreams’ Morpheus hotel in May, gourmets and wine aficionados will soon experience the combined forces of modern culinary stars in Michelin Plate Mediterranean restaurant Aurora at Altira Macau. The event will feature Aurora’s own chef Hélder Amaral, and visiting chef Eric Räty of one-Michelin-starred Arbor Hong Kong.
Representing their respective restaurants, chefs Hélder and Eric will work together in creative harmony to present cross-collaborative lunch and dinner menus occurring over two days from 28-29 June, paired with Robert Parker-rated wines with a minimum of 90 points each as curated by Aurora’s head sommelier. Chef Hélder’s mastery of French-inspired Mediterranean flavors at Aurora meets chef Eric’s innovative approach within Arbor’s nature-rich concept.
The menu includes king crab tartelette, an amuse bouche of new Potato, tuna and caviar, carabinero prawn ravioli and langoustine. Middle course is a Mediterranean seafood nage, abalone, followed by slow cooked Racan pigeon. From Arbor, diners have Kinmedai and an olive oil, coconut lime and caviar pre-dessert before a white peach. Wine pairing is also included.
Hélder Amaral is the chef de cuisine of Aurora (Altira Macau) and draws on his native Portuguese roots and classical French training to offer guests a signature taste of Aurora during the four-hands collaboration with chef Eric. Possessing a deep knowledge of Mediterranean ingredients that form the basis of Italian, Portuguese, Spanish and French cuisines, chef Hélder’s culinary career spans a number of world-renowned restaurants in Europe such as one of Switzerland’s best Portuguese restaurants, Oliveiras, and multiple five-star hotels throughout Portugal and France.
He moved to Macau in 2012 to work at contemporary French fine-dining restaurant The Tasting Room at City of Dreams, which attained its first Michelin star in 2013 and second in 2016. As chef de cuisine of the Michelin Plate-awarded Aurora in Altira Macau, Hélder serves simple and creative dishes, letting fresh ingredients shine. At Aurora, guests can experience Mediterranean fine dining with a spectacular panoramic view of the Macau skyline. The experienced culinary team crafts a seasonally-evolving signature menu, where premium seafood ingredients play a key role.
Eric Räty, Arbor Hong Kong’s chef de cuisine, hails from the pristine natural environment of Finland, chef de cuisine Eric Räty’s Nordic background shines through at the nature-rich concept of Arbor. His enchanting culinary style represents refined simplicity and vibrant innovation, combining French cooking techniques with Nordic-Japanese sensibilities. A true rising star in fine dining, chef Eric helms the Arbor kitchen with an impressive culinary repertoire under his belt, from four demanding years at two-MICHELIN-starred Chez Dominique to his valuable experience as a pastry chef at three-Michelin-starred Restaurant Aqua in The Ritz-Carlton Wolfsburg. In 2014, he became an understudy to chef Gray Kunz at Café Grey Deluxe in The Upper House, and has been incorporating Asian ingredients and flavors into his culinary craft ever since. Eric joined Arbor as chef de cuisine in early 2018, and only a few months after opening, earned the restaurant its first Michelin star.
