Executive sous chef Michele Dell’Aquila at The Manor has crafted a special six-course dinner menu of the finest ingredients and wines to celebrate Father’s Day from June 18 to 20, 2021. The menu features the best of early summer ingredients, with an emphasis on European sourced produce, starting with Fassona beef tartare from the Piedmont region of northern Italy, served with Loire Valley asparagus from France.
Chef Michele uses French Beillevaire seaweed butter in an Acquerello risotto for extra richness, dressed with smoked kinmedai, baby spinach, scamorza cheese sauce, and dusted with fennel powder. For the meat-loving father in mind, Japanese Akaushi wagyu is lightly pan-seared to preserve its exceptional buttery flavor and served alongside fresh early summer vegetables, and then drizzled with cocoa beans and Madeira beef jus to balance the rich flavor of the wagyu.
Guests can select an optional paired beverage package, featuring wines from the greatest wine-growing regions of the world, which have been curated to enhance the flavors of each dish. In addition, the menu includes a complimentary negroni cocktail for fathers. Fathers looking to extend the celebration can venture upstairs to The St. Regis Bar to enjoy the sophistication of a gin martini showcase, with expert mixologists mixing this perennial bar classic with a special selection of artisan gins from around the world.
