MGM Macau’s Aux Beaux Arts French Restaurant invites all to embark on a voyage of culinary delight with a specially crafted Prix Fixe menu of Sailor’s Night theme.
Guests can bid farewell to 2016 at Aux Beaux Arts with a five or six-course New Year’s Eve Set Dinner, which begins with two special marine amuse bouche, including French Fine de Claire oyster in Bloody Mary sauce, as well as Cured sardine with eggplant caviar and passion fruit vinaigrette; the first starter is the Octopus terrine served with blue mussels. The fresh octopus is slow-cooked for 24-hours to acquire an ultimate tenderness and distinctive flavors. A contemporary touch of aromatic wasabi mayonnaise and crispy puffed quinoa are added to add in another dimension to the dish. Next comes the Artic cod fish with squid ink risotto chips, served with 24-months aged Pata Negra, carefully laid on a delicious bed of Chinese leeks. The highlight of this dish is the special melt-in-mouth black garlic purée, seasoned with balsamic vinegar and unconventional twist of dark chocolate for its bitter flavor.
The marine taste continues to blossom with Rock lobster lasagna with pan seared scallops, which is beautifully layered with a hint of Indian curry espuma. The curry spices highlight the freshness of the seafood and creates a tempting aroma for this colorful masterpiece; the main course is Black Angus beef tenderloin and turbot, served with fava bean ragout and topped with the buttery hollandaise sauce, complementing the tender texture of the beef perfectly. Last but not the least, the dessert Yuzu cheesecake is specially crafted for guests to end the unforgettable festive dinner and get ready to say “Hello” to 2017!
To match with the theme, Aux Beaux Arts’ team members will dress up in unique-looking mariners to lead the guests into the new wonders and prospects of 2017. In addition, the entire Brasserie will be garnered with nautical features and will offer photo opportunities with the Sailor Night themed backdrop for the special evening. Surprise gifts will be given out to all the guests, followed by the countdown to 2017.
