Tokugawa at The 13 Hotel in Coloane is a Japanese restaurant, focused on Kaiseki, a traditional multi-course Japanese dinner. Chef Hiroshi Shimada who used to work at the three Michelin-starred Tokyo restaurant Azabu Yukimura has crafted a traditional Kyoto Kaiseki menu. Created with rare and extraordinary seasonal ingredients carefully selected from all parts of Japan, this menu is an ultimate indulgence for sophisticated diners.
The interior is inspired by Shinto shrines in the Tokugawa era. Guests are welcome to take Kappou seats around the open kitchen where they can observe the cooking team’s artisanal cooking skills and precision.
The restaurant is only open for dinner. You need to book one day in advance to dine at Tokugawa.
