Current Chef of the two-Michelin-starred Umu in London, Ishii’s 20-odd years in the business have been most remarkable: working in Geneva and New York as chef-in-residence for the Japanese Embassy at the United Nations, and some of the world’s most famous Japanese restaurants like Kitcho in Kyoto and Morimoto in New York, punctuated by amazing accolades including “Rising Star Chef Award” in 2008, Robb Report’s Culinary Master in 2014, and two-Michelin-star rating since 2016.
A true artist who lives and breathes Japanese culture, Ishii is also a master of calligraphy and enjoys creating floral art and ceramics – all of which he successfully incorporates into your dining experience. A keen fisherman with a good knowledge of organic farming, Ishii only uses the freshest ingredients, constantly exploring new cooking methods and refining traditional recipes so you can taste the essence of Japan like never before.
