Marking the 11th anniversary of the annual Michelin Guide Hong Kong Macau, City of Dreams will present a gala dinner themed ‘Metamorphosis’. It will be an evening inspired by the shifting trends and landscapes in the ever-evolving culinary world. The gala dinner will take place on December 11 and will include an evening of delectable dining, exuberant celebration and a gathering of industry giants. For one night only, six acclaimed chefs from 2 and 3-Michelin-starred restaurants together with celebrated pastry chef Pierre Hermé will join hands to craft a dining experience like no other.
The dinner will include poached Gillardeau oyster no.3, shellfish tartare, sea water jelly, ginger cream and lemon confit from Menton, by chef Fabrice Vulin; masa toro caviar by chef Masa Takayama; fish maw in rabbitfish soup with crab meat roll by chef Kelvin Au Yeung; cookpot of blue lobster, black truffle and potato by chef Alain Ducasse; steamed sea bass fillet in fermented bean sauce by chef Chan Yan Tak; charcoal grilled beef and charred cabbage, black truffle with “jus corsé’, by chef David Kinch and truffle dishes by Pierre Hermé.
