The Manor’s roasted halibut cutlet is a firm yet tender and the mildly-sweet fish pairs delectably with chickpea and chorizo ragu underneath. The halibut’s crisp exterior is balanced by a lemon aioli, its citrus notes help you clear the palate leaving you wanting for more. And to complete the symphony of textures, it is topped with paprika-spiced fried chickpeas.
Meat lovers can choose from a herb crumbled iberico pork that highlights the depth of flavor exuded by this sought-after meat. It matches with the nutty and savory brussel sprouts and, apple and fennel jam. Another option is the red wine braised lamb shank. The rustic preparation of slowly braising the lamb shank in red wine reduces the strong flavor of the lamb to give a flavorful, fork-tender meat that goes perfectly well with a fluffy potato espuma. It is coupled with a tingling sensation of pink peppercorn on the side.
