The Manor at The St. Regis Macao Presents Alba White Truffle Creations

The Manor at The St. Regis Macao presents the “Diamonds of the Kitchen” six-course Alba white truffle menu to delight guests with the earthy and woodsy flavors of this rare gem. Known as the “diamond of the kitchen”, the white truffle is a precious ingredient with limited production around the world. The intensely flavored white truffle needs to be espoused with delicate ingredients to bring out the best of its flavors. Executive sous chef Michele Dell’ Aquila takes guests on an aromatic six-course truffle journey curated with seasonal ingredients from Italy. The entire menu has been created to elegantly showcase the highly sought-after white truffles from Alba, the picturesque town in northwestern Italy. Known as the white truffle capital of the world, they are available for just a few months each year in Fall.
Chef Michele invites guests to celebrate fall in Italy with his six-course white truffle menu featuring exotic ingredients such as a wild game, chestnuts, and mushrooms, all topped with generous shavings of Alba white truffles. Entice the taste buds with Brittany lobster, burrata and tomato with truffle caviar, chestnut ravioli in truffle consommé, Rhug estate smoked wild roe deer Acquerello risotto with truffle crutin cheese, Mediterranean turbot baked in a cocoa crust with Calvisius Oscietra royal caviar, slow-cooked french partridge dressed with alba white truffle or Japanese Akaushi A5 sirloin with bordelaise truffle sauce and Valrhona Manjari chocolate with chestnut confit and truffle ice cream.
Guests can elevate their dining experience further with a specially curated wine pairing menu featuring premium wines from Italy, designed to accentuate the decadent flavors of the truffles.

Cha Bei Autumn Vegetarian Menu
Curious about a plant-based lifestyle? Celebrate World Vegetarian Month at Cha Bei with comfort choices that are so delicious and satisfying that you won’t miss the meat. Just to name a few, their Impossible pork moussaka is a vegetarian spin on a classic Greek festive dish. Luscious layers of autumnal vegetables are topped with a hearty Impossible meat pork ragu, creamy béchamel, a generous sprinkling of parmesan cheese, and baked to golden perfection. One of their vegan recommendations, baked celeriac with sautéed quinoa and spinach, all the trimmings are fully utilized to showcase the flavor and texture of the nutritious autumn vegetable. The skin is fried to a crisp while trimmings of the flesh are used in the creamy sauce.
