Stories of the Sea – The Sixth Chapter at The Manor

The latest evolution of The Manor’s ocean-inspired special dinner menu has arrived with the release of “Stories of the Sea – The Sixth Chapter” featuring eight courses showcasing the finest selection of seafood sourced from the oceans around the world. Executive Sous Chef Michele Dell’Aquila has evolved the menu to highlight the best flavors of the season which are then matched to the highest quality seafood including the renowned Boston lobster, bluefin tuna, and Dover sole.
To start, Boston lobster is served alongside earthy flavors such as smoked artichoke heart, black truffle, and asparagus, giving contrast to the inherent richness and sweetness of the lobster. An intensely rich onion soup with oyster using sweet onions from Auxonne in France follows, garnished with the exclusive Sevruga caviar, with the strong sea flavors of the oyster and the caviar balanced by the sweetness of the onions.

António: Creativity & Tradition Walk Hand in Hand in Chef David Abreu’s Kitchen
Nestled in Taipa Village, António is a Portuguese restaurant serving traditionally made dishes from its country of origin. With a classical decoration and delicious recipes, it now has a new chef since March 2020. David Abreu is Portuguese and has worked all around, with its last collaboration being the three Michelin starred restaurant in Berkshire (England), Waterside Inn.
There he learned discipline and rules with some of the best from the food world; previous experiences brought him inspiration and an incredible sense of creativity. Overall, the importance of never giving up and to always strive to get and be better at this craft. We sat down with the chef–over some of his newest creations–at António to chat about what’s next and how he’s enjoying this new Macau chapter.
20th Macau Food Festival
November brings delicious food to the forefront in Macau, with the 20th Macau Food Festival gathering more than 100 local businesses to display Macau’s unique cuisine culture, combining both Chinese and Western styles. Delicate Set Lunch Menus at Casa Don Alfonso
Chef Giovanni Galeota has designed a brand-new series of set lunch menus featuring organic Italian ingredients and Toscana extra virgin olive oil. You will get to sample a traditional Italian appetizer, main course, and desserts presented with the joyful vibe of Chef Galeota’s home in Italy. These new set lunch menus include different choices. For the entrée, opt between fresh burrata with grilled bell peppers, cherry tomatoes, and Don Alfonso anchovies, smoked organic chicken breast with cucumber granita, aged balsamic reduction, and candied clementine, or grilled cuttlefish gnocchi with peas sauce, black ink, and potato.
As for mains, the restaurant showcases pan-seared sole fish with green asparagus, spinach, and Jerusalem artichoke, but also Japanese sea bream in “Acqua Pazza” style with garlic bruschetta, or Australian sirloin beef with seasonal vegetables and hollandaise sauce. Between pasta and pizza options, there’s fusilli pasta with clams and arugula pesto sauce, angel hair with citrus zests and sautéed shrimps, or pizza Napoletana with nduja, Italian bacon, San Marzano tomato sauce and fior di latte.

“Diamonds of the Kitchen” Seasonal Truffle Menu at The Manor
The Manor at The St. Regis Macao presents a limited-edition six-course menu of exquisite culinary fare featuring the rich, earthy flavors of white and black truffles from Italy until the end of November. Crafted by Executive Sous Chef, Michele Dell’ Aquila, the special “Diamonds of the Kitchen” six-course set dinner menu sparkles with a selection of dishes showcasing the finest white and black truffles from Piedmont.
Highlights of the “Diamonds of the Kitchen” menu include Blackmore Waygu Beef MS9 carpaccio served with umeshu and yuzu jelly, foie gras torchon and dressed with shavings of white truffle, as well as a choice of classic northern Italian comfort food–house-made egg tagliolini with Bordier butter, porcini mushroom, and white truffle or Acquerello risotto with gold foil, artichoke, Japanese mushroom, and white truffle. For something more substantial, the “Diamonds of the Kitchen” menu offers Guinea fowl breast glazed with spices, served with salt-baked French carrots and black truffles, followed by an Australian wagyu beef fillet with Romanesco broccolini, potato galette, morel mushroom, and white truffle.
