Truffle season has arrived in Macau! Long considered a delicacy used by gourmet chefs at many a luxury restaurant, November and December are the best months of the year to dine on this fine seasonal fungus. Macau is known for its variety when it comes to dining, but truffle is rare and so some restaurants are taking their truffle offerings to the next level over the next few months. Here are our top restaurant picks to savor white and black truffles this November and December.
WHITE AND BLACK TRUFFLE SEASON AT THE MANOR

At St. Regis Macao they have a “Captivated by Nature” promotion running in November featuring special dishes such as Daniel Sorlut oysters with Baikal caviar, pumpkin and white truffle soup, Glacier 51 toothfish and a white chocolate truffle crème brûlée. In December, a new menu will focus on black truffle and feature specialty dishes including the luxurious Hokkaido scallop, Rémi Ramon yellow Spring chicken “in half-mourning”, and a unique black truffle chocolate mille-feuille. Black truffles grow in several countries across the world, but the most sought-after varieties are only found in the mountainous regions of central and northern Italy, and these will be on offer during the special promotion in December. They grow underground attached to tree roots and are ‘unearthed’ by specially trained truffle dogs that use their heightened sense of smell to find them.

SIX-HANDS DINNER WITH TRUFFLES AT 8 1/2 OTTO E MEZZO BOMBANA
In December, restaurant 8 1/2 Otto e Mezzo Bombana will have a six-hands dinner with chef Umberto Bombana, known as “The King of White Truffle” and the founder of the restaurant’s chain. He joins in-house chef Antimo Merone and Shanghai chef Riccardo La Perna for a white truffle dining experience to remember. This one-night-only dinner will feature seven different dishes with the choice of wine pairing for all of them, or just three. The menu includes oysters, roe deer with spinach, hazelnut and Alba white truffle, ricotta gnocchi, wild turbot with Alba white truffle, and many more.

TRUFFLE SHAVING AT CAFFÉ B

TRUFFLE SEASON AT BENE ITALIAN KITCHEN
Bene’s “White Truffles at their Finest” menu in November includes poached white asparagus with seared Hokkaido scallops and guanciale cured pork cheek with salmon trout roe, plus braised beef cheek with Barolo wine as well as white truffle tiramisu with gianduja gelato – all served with shavings of white truffle. Hungry yet? In December, a new menu will focus on black truffle, featuring specialty dishes such as baby kale with parma ham and goat cheese salad, butter-roasted rainbow trout wrapped in parma ham, and a special black truffle pannacotta. An optional beverage pairing package includes a range of prosecco and Italian wines from all over Italy designed specifically to bring out the delicious flavors of the truffle in each dish.
